EACH PRODUCT DRIES AT A DIFFERENT RATE BASED ON THE INHERENT WATER CONTENT IN THE PROTEIN.

  • MUSCLE MEAT IS SLICED IN THIN STRIPS WITH THE FAT REMOVED AND IS SAFELY DRIED IN 48 HOURS.

  • HEART, LIVER AND SPLEEN ARE NUTRIENT DENSE WITH A THICKER TEXTURE AND DRY FOR UP TO 72 HOURS.

  • SALMON, COD, ANCHOVIES AND GREEN LIPPED MUSSELS CONTAIN THE MOST MOISTURE AND CAN TAKE UP TO 5 DAYS TO COMPLETELY REMOVE THE MOISTURE.
